80% Nerello Mascalese, 20% Nerello Cappuccio grapes from 5 to 30-year-old vines situated in Contrada Santo Spirito, Passopisciaro on the northern slopes of Mt Etna, Sicily.
10 days maceration on skins. Malolactic fermentation in stainless steel. 50% age for 12 months in stainless steel and 50% age for 12 months in large oak barrels with a further 12 months in the bottle.
This wine is a lovely ruby red colour. It has a spicy nose with fresh wild herbs, black pepper, blackberry, liquorice, rose and volcanic ash hints. It has a fresh, juicy, balanced and elegant palate with a savoury mineral finish.
It's wonderful with cured meats and cheeses, pizza, pasta or risotto with meat sauce, and BBQs or red meat roasts.
Decanting is recommended approximately an hour prior.

The Palmento Costanzo estate is located in the town of Contrada Santo Spirito, Passopisciaro on the northern slopes of Mt Etna.
Founded by husband and wife Mimmo and Valeria Costanzo in 2011, the name “Palmento” derives from the 19th century 'palmento' grape stone press which they have painstakingly restored.
14 hectares of terraced vineyards with nutrient-rich, brown volcanic sands grow at elevations ranging from 680 to 800 metres and farming is carried out organically.
Vines vary in age from 5-30 years old for the fresher, younger Mofete range and up to 120 years for the pre-phylloxera vines.
